In October 2025, the iconic Taste of SLS returned to Dubai, transforming the hotel’s multiple floors into a playground of creativity, flavor, and innovation. Each level offered a distinct experience, from elegant dining rooms to futuristic tasting stations — blending fine cuisine with music, art, and energy that captured the spirit of the city.
Among the event’s standout moments was the “Salad of the Future,” sponsored by Greeneration, a leading name in sustainable vertical farming.
Chefs preparing fine-dining creations with hydroponically grown microgreens and edible flowers
The installation embodied a new era of food, fresh, clean, and locally grown. The microgreens and edible flowers featured in the dish were cultivated in a fully hydroponic system, grown in Dubai without soil or pesticides, and clean enough to eat straight from the leaf.
Guests watched chefs craft refined dishes using these ingredients, highlighting how sustainability and flavor can coexist beautifully. The result was more than a salad; it was a statement about where fine dining is heading: local, conscious, and visionary.
The night concluded with a rooftop celebration overlooking Dubai’s skyline, an electric mix of music, lights, and flavors, closing the event with a symbolic toast to the future of gastronomy.
